Instead of using 6x AA batteries, is it be possible to use a step up voltage regulator?

I would recommend the 6x AA batteries, or a rechargeable pack (7.2V).  Use the type designed for RC cars or airsoft guns, 200mAH or greater capacity will give you many hours of play time between recharging.

If you need smaller and lighter weight pack you can use a Lithium rechargeable pack, you should be able to find 7.4V packs.  But these tend to be a bit more expensive and require a special charger.

most airsoft guns come with a battery - typically 8.4v mini. Is the higher voltage a killer or could you use it in the build? I'd hate to burn out a board because the battery is too strong but the size is great. Thoughts?

8.4V is fine, you'll want to add some more resistance for the IR LED though.
